Recipes Worth Celebrating
Dip! Dip! Hooray!
Our layered fiesta dip is so versatile it can be anything from a simple appetizer to a full meal, made for a party of one or to feed a crowd, and customized to fit everyone's tastes.
Ingredients:
1 can bean dip or refried beans
8 ounces sour cream
1/2 package taco seasoning
Guacamole (see our recipe here)
Shredded Mexican Style Blend cheese
2 tomatoes, diced
1/4 cup green onion, chopped
1 small can sliced black olives
Cilantro
Grilled chicken (optional)
Jalapeños (optional)
Directions:
Spread thin layer of bean dip or refried beans into clear glass Pyrex dish.
Mix 1/2 package of taco seasoning into sour cream and spread layer on top of beans.
Add layers of guacamole, cheese, diced tomato, green onion, sliced black olives, grilled chicken cut into bite-size pieces (if desired), jalapeños (if desired), and top with cilantro.
Tortilla Stack Ups
Ingredients:
1 12-count package flour tortillas
1 8-ounce package of cream cheese
1/3 C chunky salsa
1/4 C chopped green onions
1 teaspoon chili powder
1 teaspoon garlic salt
Toothpicks
Directions:
Allow cream cheese to soften at room temperature
Mix in salsa, green onions, chili powder, and garlic salt
Spread cream cheese mixture over a tortilla, layer another tortilla, another layer of cream cheese mixture, and top with third tortilla.
Repeat layering process for 3 more stacks.
Place all stacks flat in a gallon-size baggie and chill in refrigerator for at least 1 hour.
Cut tortilla stacks into bite-sized pieces and add 2 small stacks onto a toothpick
Serve with salsa or guacamole
Mexican Hot Chocolate Cookies
If you like your sweets with a kick of spice at the end, these are the cookies for you!
Ingredients:
1 cup sugar
½ canola oil
2 eggs
1 Tbsp. vanilla
¾ cup flour
¾ cup cocoa powder
2 tsp. cinnamon
½ tsp. cayenne pepper
1 tsp. baking soda
1 cup semi-sweet chocolate chips
Directions:
Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
In a large bowl, add sugar and oil and whisk until combined. Whisk in eggs and vanilla until combined.
In a separate bowl, whisk all of the dry ingredients together.
Add the dry ingredients to the wet ingredients and mix until just combined. Add the chocolate chips and mix until distributed evenly. Do not over mix the cookie dough.
With a cookie scoop, scoop out cookies onto cookie sheet.
Set in refrigerator for 10 to 15 minutes or until cookies harden a little.
Remove from refrigerator and push cookies down a little with your hand so that they are more flat then dome shaped.
Bake for 8 to 10 minutes until the edges are set and the center does not look raw.
Yields: 24 cookies
Nacho Average Teacher's Gift
If the past year has taught us anything, it is that teaching is a little more difficult than most parents believed. This school year was especially hard and teachers have never needed to be shown appreciation more! So why not given them their very own fiesta?!
We filled a basket with fun fiesta platters, plates, a serape, napkins, chips, homemade salsa, bottles of Jarritos soda, Hot Tamales and Red Hot candies, a bouquet of flowers, miniature piñatas, and more!
Speaking from personal experience, please don't forget those high school teachers! They work hard and are so often overlooked when it comes to gifts of appreciation.
